I love this dressing! It’s simple to make and delicious on a variety of salads. Compared to similar organic dressings you can buy at the grocery store, making this dressing will save you a lot of money. And…it tastes amazing!
Total time: 5 minutes Yield: about 1 cup
2/3 cup olive oil
1/2 cup apple cider vinegar with “The Mother” (this is unrefined, unfiltered vinegar)
2 cloves of garlic
2 tablespoons whole-grain dijon mustard (you can also use regular dijon mustard)
1/2 teaspoon pepper
salt (to taste)
Combine all ingredients and blend until the dressing is smooth. You can use a regular blender or an immersion blender. You can also mix the ingredients by hand, just make sure you mince the garlic first!
That’s all there is to it!
Serve with any of your favorite salad greens. Add cranberries, cherries, apples, oranges, or other fruit. This dressing complements them all!
